How to make your levain.  

First off, put your jar onto the scale and zero it out.  

Add the proper amount of starter to your jar.  It is okay to be a gram above or below.  

Add the same amount of artisan or bread flour to your jar.   

Add the same amount of whole wheat flour to your jar. 

Now add double the amount of filtered water to the mixture.  (You are adding the same amount of water as you did of the combined flours.)

Mix well.  Put the lid on the jar (do not tighten the lid) and allow the levain to double in size.  This is when it is ready to use.
