Sourdough Dinner Rolls
350 grams of unbleached, all purpose flour
70 grams of whole wheat flour
1 1/4 tsp salt
3 tbsp of brown sugar
120 grams of sourdough starter
6 oz filtered, lukewarm water
4 tbsp melted, unsalted butter
1 tbsp of soft butter for the tops after baking
Mix all ingredients in a bowl. Knead the dough for about eight minutes on a hard surface. Put the dough back in the bowl and cover. Let it sit out overnight.
In the morning, divide the dough into 12 balls. Place on a greased cookie sheet (I use butter). Cover with plastic wrap and a towel. Let it sit out all day.
Late afternoon or early evening, cook at 375 degrees for about 20 minutes.
Pull them out of the oven and brush a little butter on the tops. Bake 5 more minutes. (could also use an egg wash). Done when browned on top and the internal temperature is about 175 degrees
After kneading and ready to rest over night.
Rolled into balls on greased cookie sheet ready to enjoy the day resting while covered and kept warm under a towel.
These guys have been sitting out all day and are ready to be baked.
Light and fluffy and better with butter!
