480 grams of fresh sourdough starter
2 tbsp sugar
2 tbsp oil: olive, avocado, or coconut... any work
2 tbsp milk, almond milk, or water
1 tsp baking soda
1/4 tsp salt
blueberries or chocolate chips (optional but recommended!)
butter or oil for cooking (I use a well seasoned cast iron pan, so not needed)
Beat the egg.
Mix together egg, starter, sugar, oil, milk, baking soda and salt. You can add chocolate chips or blueberries.
Add slightly more milk if you want a thinner pancakes.
Heat your pan over medium heat. Melt butter or add oil if needed. Once it is good and hot, add your batter. Cook until you get some nice bubbles and then flip.
Enjoy with butter and a little maple syrup!
